  3. Press the crumb mixture into the bottom of a lined muffin tin, creating a crust.

  5. Add the sour cream, vanilla extract, and flour to the cream cheese mixture, and beat until well combined.
  6. Add the eggs, one at a time, beating well after each addition.
  7. Pour the cream cheese mixture over the crust in each muffin cup, filling them about 3/4 full.
  8. Bake for 18-20 minutes, or until the cheesecakes are set.
  9. Remove from the oven and let them cool in the muffin tin for 5 minutes.
  10. Transfer the mini cheesecakes to a wire rack to cool completely.
  11. Once cooled, refrigerate for at least 2 hours or overnight.
  12. Before serving, top each mini cheesecake with your choice of assorted toppings.
