  1. Preheat the oven to 180°C (350°F) and line a baking pan with parchment paper.
  2. In a heatproof bowl, melt the butter and dark chocolate together over a saucepan of simmering water. Stir until smooth.
  3. In a separate large bowl, whisk together the sugar, eggs, and vanilla extract.
  4. Pour the melted chocolate mixture into the sugar and egg mixture and stir until well combined.
  5. In a small bowl, sift together the all-purpose flour, cocoa powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Stir in the peppermint extract and green food coloring.
  8. Fold in the mint chocolate chips.
  9. Pour the batter into the prepared baking pan.
  10. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  11. Remove from the oven and let the brownies cool in the pan for 1 hour.
  12. Once cooled, remove the brownies from the pan and cut into squares. Serve and enjoy!
