Preheat the oven to 325°F (163°C).

In a small bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a lined muffin tin to form the crust.

In a large bowl, beat the cream cheese until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and lemon juice.

Pour the cream cheese mixture over the crust in the muffin tin, filling each cup about 3/4 full.

Bake for 20-25 minutes, or until the cheesecakes are set and slightly golden around the edges.

Remove from the oven and let cool in the tin for 10 minutes. Then transfer to a wire rack to cool completely.

Once cooled, refrigerate for at least 1 hour before serving.

Serve chilled, topped with a dollop of sour cream and fresh berries if desired.
