Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, whisk together the melted coconut oil and sugar until well combined. Add the eggs and vanilla extract, and whisk until smooth.

Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk. Mix until just combined.

Fold in the chocolate chips.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
