Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the diced peaches.
  5. In a separate small bowl, combine the milk and vanilla extract. Gradually add the milk mixture to the flour mixture, stirring until just combined. Be careful not to overmix.
  6. Transfer the dough onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a circle about 1-inch thick.
  7. Use a round cookie cutter or a glass to cut out mini scones from the dough. Place the scones onto the prepared baking sheet.
  8. Brush the tops of the scones with a little milk.
  9. Bake for 12-15 minutes, or until the scones are golden brown.
  10. Allow the scones to cool for 10 minutes before dusting with powdered sugar.
  11. Serve and enjoy!
