  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and cut out circles to fit into a muffin tin.
  3. Peel, core, and chop the apples into small pieces.
  4. In a bowl, mix the chopped apples, sugar, cinnamon, and lemon juice.
  5. Spoon the apple mixture into the pie crust circles.
  6. Cut small pieces of butter and place on top of each mini pie.
  7. Cover the pies with another circle of pie crust and press the edges to seal.
  8. Cut slits on top of each pie to allow steam to escape.
  9. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
  10. Allow the mini apple pies to cool before serving.
