In a large bowl, mix the all-purpose flour, semolina flour, unsalted butter, rosewater, and orange blossom water until a dough forms.

Divide the dough into walnut-sized balls.

Flatten each ball in your palm, then place a small amount of date paste in the center.

Fold the dough over the date paste, sealing it completely.

Place the filled cookies on a baking sheet and bake at 350°F (175°C) for 15-20 minutes, or until golden brown.

Remove from the oven and let the cookies cool on a wire rack.

Once cooled, dust with powdered sugar and sprinkle with finely chopped pistachios.
