  2. In a clean bowl, whisk the egg whites until stiff peaks form.
  3. Gradually add the caster sugar, cornstarch, and vinegar while continuing to whisk until the mixture is glossy and holds its shape.
  4. Spoon the meringue mixture onto the prepared baking sheet, forming individual nests.
  5. Bake for 90 minutes or until the meringues are crisp and dry. Turn off the oven and let them cool completely in the oven.
  6. In the meantime, wash and slice the fresh strawberries.
  7. In a separate bowl, mix the mascarpone cheese and powdered sugar until smooth.
  8. Melt the dark chocolate in a heatproof bowl over simmering water.
  9. Once the meringues have cooled, fill each nest with a dollop of mascarpone mixture, top with fresh strawberries, and drizzle with melted dark chocolate.
  10. Garnish with fresh mint leaves before serving.
