Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, and salt.

In a large bowl, cream together the softened butter and 1/2 cup of granulated sugar until light and fluffy.

Beat in the egg, molasses, and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Place the remaining 1/4 cup of granulated sugar in a small bowl.

Roll the dough into 1-inch balls, then roll each ball in the sugar until coated.

Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 8-10 minutes, or until the edges are set and the tops are cracked.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.
