The Muffuletta sandwich originated in New Orleans and is traditionally made with cured meats and a tangy olive salad. This meatless version swaps the meats for a variety of flavorful ingredients.

  1. Preheat a panini press or grill pan.
  2. Slice the ciabatta bread horizontally.
  3. In a small bowl, mix olive oil, red wine vinegar, and minced garlic to make a dressing.
  4. Brush the dressing on the inside of the bread.
  5. Layer black olives, green olives, roasted red peppers, artichoke hearts, provolone cheese, and fresh basil leaves on one side of the bread.
  6. Place the other half of the bread on top.
  7. Press the sandwich in the panini press or grill pan for about 5 minutes, until the bread is crispy and the cheese is melted.
  8. Remove from the press or pan and let it rest for a few minutes.
  9. Slice the sandwich into quarters and serve.
