Preheat the oven to 350°F (175°C).

Break the matzoh sheets into small pieces and place them in a large bowl. Pour the vegetable broth over the matzoh and let it soak for about 5 minutes.

In a large skillet, heat the olive oil over medium heat. Add the onion, carrot, and celery, and sauté until they start to soften, about 5 minutes.

Add the garlic, mushrooms, and peas to the skillet and cook for another 5 minutes.

Transfer the vegetable mixture to the bowl with the soaked matzoh. Add the parsley, thyme, salt, and pepper. Mix well to combine.

Transfer the stuffing mixture to a greased baking dish and cover with foil.

Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the top is golden brown.
