Mashed potatoes are a popular side dish in many countries and are often served with roasted meats or poultry.

Preheat the oven to 400°F (200°C).

Cut off the top of the garlic bulb to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30 minutes.

Peel and chop the shallots.

Peel and quarter the potatoes.

Boil the potatoes in salted water until tender, about 15 minutes.

Drain the potatoes and return them to the pot.

Squeeze the roasted garlic cloves out of their skins and add them to the pot with the potatoes.

Add the chopped shallots, butter, milk, salt, and black pepper to the pot.

Mash the potatoes until smooth and creamy.
