Preheat the oven to 350°F (175°C). Grease a 9-inch (23cm) springform pan.

Peel, core, and slice the apples. In a large bowl, toss the apple slices with 2 tablespoons of granulated sugar. Set aside.

In a separate large bowl, cream the butter and remaining granulated sugar until light and fluffy. Beat in the eggs, one at a time. Stir in the flour, baking powder, vanilla extract, and salt until well combined.

Spread half of the batter into the prepared pan. Arrange half of the apple slices on top. Repeat with the remaining batter and apple slices.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then remove the sides of the springform pan. Let the cake cool completely on a wire rack.

Dust the top of the cake with powdered sugar before serving.
