Maple Butternut Squash Donuts
Butternut squash is a good source of vitamin A, vitamin C, and fiber.

Preheat the oven to 350°F (175°C).

Cut the butternut squash in half, remove the seeds, and roast in the oven until tender. Scoop out the flesh and mash it.

In a large bowl, combine the mashed butternut squash, flour, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, whisk together the eggs, maple syrup, milk, and vegetable oil. Add this mixture to the dry ingredients and stir until well combined.

Grease a donut pan with oil or cooking spray. Spoon the batter into the donut pan, filling each cavity about 3/4 full.

Bake for 12-15 minutes, or until a toothpick inserted into the donuts comes out clean.

Allow the donuts to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

In a small bowl, whisk together the powdered sugar and vanilla extract. Drizzle the glaze over the cooled donuts.
