Boil the eggs for 8 minutes and let them cool. Peel and chop them.

In a bowl, mix the chopped eggs, mayonnaise, Dijon mustard, chives, salt, and pepper.

Cut the croissants in half horizontally.

Place the mixed greens on the bottom half of each croissant.

Spoon the egg salad mixture over the greens.

Cover with the top half of the croissant.
