Crush the digestive biscuits and mix with melted butter. Press the mixture into the bottom of a springform pan.

In a mixing bowl, beat the cream cheese until smooth. Add mango puree, pineapple puree, and lime juice. Mix well.

In a separate bowl, dissolve gelatin in water and let it bloom for 5 minutes. Microwave for 10 seconds to melt the gelatin.

Add the melted gelatin to the cream cheese mixture and mix well.

Fold in the whipped cream gently.

Pour the mixture over the biscuit base in the springform pan. Smooth the top with a spatula.

Refrigerate for at least 4 hours or until set.

Garnish with mango slices, pineapple slices, and lime zest before serving.
