  2. Cut each puff pastry sheet into 6 equal rectangles.
  3. Place the pastry rectangles on a baking sheet lined with parchment paper.

  5. Remove from the oven and let cool completely.
  6. Drain the mandarin oranges and set aside.
  7. In a mixing bowl, whip the heavy cream, powdered sugar, vanilla extract, and orange zest until stiff peaks form.
  8. To assemble the napoleons, place a puff pastry rectangle on a serving plate, top with a spoonful of whipped cream, and arrange mandarin orange slices on top.
  9. Repeat the layers, finishing with a puff pastry rectangle.
  10. Garnish with whipped cream and orange zest, if desired.
  11. Refrigerate for at least 30 minutes before serving.
