Malaysian Pineapple Pastries

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the flour and mix until the dough comes together.

Divide the dough into two equal portions and shape each portion into a disc. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

Roll out one portion of the dough on a lightly floured surface to about 1/4 inch (6 cm) thickness. Cut out rounds using a cookie cutter or a glass.

Place a pineapple slice in the center of each round.

In a small saucepan, combine the cornstarch and water. Cook over medium heat, stirring constantly, until thickened.

Spoon the thickened cornstarch mixture over the pineapple slices.

Roll out the remaining dough and cut out rounds to cover the pineapple slices. Press the edges to seal.

Optional: Brush the pastries with egg wash for a shiny finish.
