In a food processor, grind the almonds until fine. Transfer to a bowl.

In a large mixing bowl, combine the ground almonds, fine semolina, granulated sugar, butter, orange blossom water, and ground cinnamon. Mix well until a dough forms.

Preheat the oven to 180°C (350°F).

Divide the dough into small portions and shape them into oval or diamond shapes.

Place the shaped dough on a baking sheet lined with parchment paper.

Bake in the preheated oven for 20-25 minutes, or until golden brown.

While the cookies are baking, prepare the syrup by combining honey and water in a saucepan. Bring to a boil and let it simmer for 5 minutes.

Remove the cookies from the oven and immediately dip them in the hot syrup. Allow them to soak for a few minutes.

Remove the cookies from the syrup and let them cool on a wire rack.

Once cooled, store in an airtight container.
