  1. Preheat the oven to 325°F (163°C). Crush the chocolate cookies and mix with melted butter. Press the mixture into the bottom of a greased 9-inch (23 cm) springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  3. Dissolve instant coffee in hot water and add to the cream cheese mixture. Mix until well combined.
  4. Pour the mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven for 2 hours.
  6. Remove from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight.
  7. Before serving, garnish with whipped cream and chocolate shavings.
