Madeleines
Madeleines are said to have originated in the Lorraine region of France and are named after a young servant girl named Madeleine who baked them for the Duke of Lorraine.

Melt the butter and let it cool.

In a mixing bowl, beat the eggs and sugar until light and fluffy.

Gradually add the flour, baking powder, lemon zest, and salt to the egg mixture, mixing well after each addition.

Slowly pour in the melted butter and fold until well combined.

Cover the batter and refrigerate for at least 30 minutes.

Preheat the oven to 180°C (350°F) and grease a madeleine mold.

Spoon the batter into the mold, filling each shell-shaped cavity about 2/3 full.

Bake for 10-12 minutes until the madeleines are golden brown and spring back when lightly touched.

Remove from the oven and let them cool in the mold for a few minutes.

Gently remove the madeleines from the mold and transfer them to a wire rack to cool completely.
