Mac and Cheese Quesadillas

Cook the macaroni according to the package instructions.

In a large saucepan, melt the butter over medium heat.

Add the flour and whisk until smooth.

Gradually whisk in the milk and cook until thickened.

Add the cheddar cheese and Monterey Jack cheese, stirring until melted and smooth.

Drain the cooked macaroni and add it to the cheese sauce, stirring until well coated.

Season with salt and pepper.

Heat a large skillet over medium heat.

Place a tortilla in the skillet and spread a layer of the mac and cheese mixture on top.

Sprinkle with green onions.

Top with another tortilla and cook until golden brown, about 2-3 minutes per side.

Repeat with the remaining tortillas and mac and cheese mixture.

Cut the quesadillas into wedges and serve hot.
