Preheat the oven to 400°F (200°C).

Scrub the potatoes and pierce them several times with a fork.

Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.

Remove the potatoes from the oven and let them cool slightly.

Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin shell.

In a bowl, mash the potato flesh with sour cream, cheddar cheese, green onions, salt, and black pepper.

Spoon the mixture back into the potato shells.

Sprinkle paprika on top.

Return the potatoes to the oven and bake for an additional 15 minutes, or until heated through and lightly browned.

Let the potatoes rest for 5 minutes before serving.
