  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, pulse the macadamia nuts until finely ground.
  3. In a large bowl, combine the ground macadamia nuts, almond flour, coconut flour, baking powder, erythritol, cinnamon, and salt.
  4. In a separate bowl, whisk together the eggs, almond milk, vanilla extract, and mock banana extract.
  5. Pour the wet ingredients into the dry ingredients and stir until well combined.
  6. Divide the batter evenly among 12 muffin cups lined with paper liners.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the muffins cool in the pan for 10 minutes.
