Preheat the oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking soda, and salt. In a separate bowl, mix together the applesauce, coconut oil, brown sugar, granulated sugar, and vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until well combined. Fold in the dark chocolate chips. Drop spoonfuls of dough onto a lined baking sheet. Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
