Oatmeal cookies were first made in Scotland and were originally called ‘oat cakes’. They were a staple food for Scottish soldiers.
This is vegetarian recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 11.

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.

In a large bowl, combine oats, flour, baking soda, and salt.

In a separate bowl, mix melted butter, brown sugar, and granulated sugar until well combined. Add the egg and vanilla extract, and mix until smooth.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the chocolate chips and chopped nuts (if using).

Press the mixture evenly into the prepared baking dish.

Bake for 20-25 minutes, or until the edges are golden brown.

Remove from the oven and let it cool in the pan for 10 minutes.

Cut into bars and serve.
