  1. Heat sesame oil in a large frying pan or wok over medium heat.
  2. Add chopped onion and minced garlic cloves. Cook until onion is translucent.
  3. Push the onion and garlic to one side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked.
  4. Add the mixed vegetables to the pan and stir-fry for a few minutes until heated through.
  5. Add the cooked rice to the pan and mix well with the vegetables and eggs.
  6. Pour soy sauce over the rice mixture and stir to evenly coat everything.
  7. Season with salt and black pepper to taste.
  8. Cook for a few more minutes, stirring occasionally, until everything is heated through.
  9. Remove from heat and garnish with sliced green onions and chopped cilantro.
  10. Let the fried rice rest for 5 minutes before serving.
