  1. Cut the cauliflower into florets.
  2. In a large pot, bring vegetable broth to a boil.
  3. Add cauliflower florets and garlic cloves to the boiling broth. Cook for 10-15 minutes until cauliflower is tender.
  4. Drain the cauliflower and garlic, reserving some of the cooking liquid.
  5. In a blender, combine the cooked cauliflower, garlic, olive oil, Greek yogurt, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  6. If the mixture is too thick, add some of the reserved cooking liquid to achieve desired consistency.
  7. Transfer the creamy cauliflower mixture to a serving bowl.
  8. Garnish with fresh parsley.
  9. Serve warm and enjoy!
