Lentil Soup With Minted Yogurt

Rinse the lentils under cold water.

In a large pot, heat some oil and sauté the onion, carrot, celery, and garlic until softened.

Add the lentils, vegetable broth, cumin, coriander, turmeric, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25 minutes.

In the meantime, prepare the minted yogurt by combining the mint leaves, Greek yogurt, and lemon juice in a blender. Blend until smooth.

Once the lentils are cooked, remove from heat and let the soup rest for 5 minutes.

Serve the lentil soup hot, topped with a dollop of minted yogurt.
