Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.

In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add the molasses, egg, and vanilla extract to the butter mixture and mix well.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Roll the dough into 1-inch balls and place them on the prepared baking sheets.

Bake for 10-12 minutes or until the edges are set.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

In a medium bowl, beat the powdered sugar, cream cheese, softened butter, and vanilla extract until smooth.

Spread the frosting on the bottom side of half of the cookies.

Top with the remaining cookies to make sandwiches.

Let the cookies rest for 30 minutes before serving to allow the frosting to set.
