Lentil Salad with Soft-Cooked Eggs
Lentils are a great source of plant-based protein and are rich in fiber, iron, and folate.

Rinse the lentils and cook them in boiling water for about 20 minutes until tender.

While the lentils are cooking, place the eggs in a saucepan and cover with water. Bring to a boil, then reduce the heat and simmer for 6 minutes for soft-cooked eggs. Remove from heat and place in cold water to stop the cooking process.

Drain the lentils and let them cool slightly.

Meanwhile, chop the cherry tomatoes, cucumber, red onion, parsley, and mint.

In a large bowl, combine the lentils, chopped vegetables, lemon juice, olive oil, salt, and black pepper. Mix well.

Peel the soft-cooked eggs and cut them into halves or quarters.

Serve the lentil salad topped with the soft-cooked eggs.
