Preheat the oven to 325°F (163°C).

In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.

Add the sour cream, lemon juice, lemon zest, and vanilla extract. Mix until well combined.

Add the eggs, one at a time, mixing well after each addition.

Gradually add the flour and mix until just combined.

Pour the batter over the crust in the springform pan.

Bake for 45 minutes, or until the edges are set and the center is slightly jiggly.

Turn off the oven and leave the cheesecake inside for 1 hour.

Remove the cheesecake from the oven and let it cool to room temperature.

Refrigerate for at least 3 hours, or overnight, before serving.
