Preheat the oven to 350°F (175°C). Grease 4 ramekins with butter.

In a large bowl, whisk together the ricotta cheese, eggs, lemon zest, lemon juice, and vanilla extract.

In a separate bowl, mix together the almond flour, baking powder, salt, and stevia.

Gradually add the dry ingredients to the ricotta mixture, stirring until well combined.

Divide the mixture evenly among the prepared ramekins.

Place the ramekins on a baking sheet and bake for 20-25 minutes, or until the soufflés are puffed and golden.
