Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the softened butter, all-purpose flour, powdered sugar, salt, and lemon zest. Mix until crumbly.

Press the mixture into the bottom of a greased 8x8-inch baking dish.

Bake for 15 minutes.

In another bowl, whisk together the granulated sugar, eggs, lemon juice, and vanilla extract.

Pour the mixture over the baked crust.

Bake for an additional 20-25 minutes, or until the filling is set.
