  4. Add a layer of fresh raspberries on top of the lemon sorbet.
  5. Repeat the process with raspberry sorbet, smoothing the surface.
  6. Finally, add a scoop of vanilla ice cream and sprinkle lemon zest on top.
  7. Cover the muffin tin with plastic wrap and freeze for at least 4 hours or until firm.
  8. To serve, remove the bombes from the muffin tin and garnish with fresh mint leaves.
