In a large bowl, mix together the melted butter and sugar until well combined. Add the eggs, one at a time, mixing well after each addition. Stir in the lemon zest and grated ginger.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
