Lemon cookies are believed to have originated in Italy and were traditionally made during the holiday season.

In a mixing bowl, cream the butter and granulated sugar until light and fluffy.

Beat in the egg, lemon zest, and lemon juice.

Cover the dough and refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
