  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add diced onion and minced garlic cloves. Cook until onion becomes translucent.
  3. Add sliced carrot and frozen peas. Stir-fry for 3-4 minutes until vegetables are tender.
  4. Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked.
  5. Add cooked rice to the pan and mix well with the vegetables and eggs.
  6. Pour soy sauce over the rice mixture and season with salt and pepper. Stir-fry for another 2-3 minutes.
  7. Garnish with sliced green onions and serve hot.
