Leek, Mushroom and Goat Cheese Tart

Preheat the oven to 375°F (190°C).

Roll out the pie crust and press it into a tart pan.

In a skillet, heat the olive oil over medium heat.

Add the leeks and mushrooms, and sauté until they are softened.

In a bowl, whisk together the eggs, heavy cream, salt, black pepper, and thyme.

Spread the leek and mushroom mixture over the pie crust.

Pour the egg mixture over the vegetables.

Crumble the goat cheese on top.

Bake in the preheated oven for 35-40 minutes, or until the tart is set and golden brown.
