  1. Preheat the oven to 180°C (350°F).
  2. Peel and thinly slice the potatoes.
  3. In a saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  4. Add the thyme, salt, and black pepper to the saucepan. Stir well.
  5. Add the milk and bring to a simmer. Remove from heat.
  6. In a greased baking dish, arrange a layer of sliced potatoes. Pour half of the milk mixture over the potatoes.
  7. Sprinkle half of the grated cheddar cheese over the potatoes.
  8. Repeat the layers with the remaining potatoes, milk mixture, and cheddar cheese.
  9. Cover the baking dish with foil and bake for 45 minutes.
  10. Remove the foil and bake for an additional 15 minutes or until the top is golden and the potatoes are tender.
  11. Let the dish rest for 10 minutes before serving.
