Heat olive oil in a pan and sauté the onion and garlic until translucent.

Add the spinach to the pan and cook until wilted. Set aside.

Grease a baking dish and layer half of the sliced potatoes at the bottom.

Spread the spinach mixture evenly over the potatoes.

Sprinkle half of the cheddar cheese, salt, black pepper, and parsley on top.

Layer the remaining sliced potatoes on top and sprinkle with the remaining cheese, salt, black pepper, and parsley.

Cover the baking dish with foil and bake for 45 minutes.

Remove the foil and bake for an additional 15 minutes until the potatoes are golden and crispy.
