Preheat the oven to 180°C (350°F).

Slice the leeks and potatoes into thin rounds.

In a saucepan, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.

Gradually whisk in the milk until smooth. Cook for 5 minutes, or until the sauce thickens.

Stir in half of the grated Gruyere cheese, nutmeg, salt, and black pepper.

In a greased baking dish, layer the sliced leeks and potatoes. Pour the cheese sauce over the top.

Sprinkle the remaining grated Gruyere cheese on top.

Bake for 45 minutes, or until the potatoes are tender and the top is golden and bubbly.

Let it rest for 10 minutes before serving.
