  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sliced plums, granulated sugar, lemon juice, cornstarch, cinnamon, and salt. Toss until the plums are evenly coated. Set aside.
  3. In a separate bowl, combine flour, granulated sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, until the dough comes together.
  4. Divide the dough in half. Roll out one half on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the dish.
  5. Pour the plum filling into the pie dish.
  6. Roll out the remaining dough and cut into strips. Create a lattice pattern on top of the pie.
  7. Trim and seal the edges of the pie. Brush the lattice top with melted butter.
