Lainey Collums Down the Rabbit Hole
The dish was inspired by Lewis Carroll’s ‘Alice’s Adventures in Wonderland’ and is named after the character Lainey Collums, who goes on a whimsical journey down the rabbit hole.

Cook the pasta according to the package instructions. Drain and set aside.

In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.

Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender.

Stir in the spinach and cook until wilted.

Add the cooked pasta to the skillet and mix well.

Stir in the cream cheese and Parmesan cheese until melted and well combined.

Season with salt and black pepper to taste.

Transfer the mixture to a baking dish and sprinkle breadcrumbs on top.

Bake in a preheated oven at 350°F (175°C) for 30 minutes or until the top is golden and crispy.
