Peel and grate the kumara. Place it in a bowl.

Add corn kernels, flour, baking powder, egg, milk, spring onions, salt, and pepper to the bowl. Mix well.

Heat oil in a frying pan over medium heat.

Spoon the mixture into the pan to form fritters. Cook for 3-4 minutes on each side until golden brown.

Remove from the pan and drain on a paper towel.

Serve hot with your favorite dipping sauce.
