  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the sour cream, key lime juice, vanilla extract, and flour. Mix well.
  4. Add the eggs one at a time, beating well after each addition.
  5. Pour the filling over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 40 minutes or until the center is set and the edges are lightly golden.
  7. Remove from the oven and let cool in the pan for 10 minutes.
  8. Run a knife around the edges of the pan to loosen the cheesecake.
  9. Remove the sides of the springform pan and let the cheesecake cool completely.
  10. Refrigerate for at least 2 hours or overnight.
  11. Serve chilled with whipped cream and lime zest on top.
