  1. Peel and dice the potatoes, carrot, onion, garlic, and ginger.
  2. Heat cooking oil in a pan and sauté the onion, garlic, and ginger until fragrant.
  3. Add the curry powder and stir well.
  4. Add the diced vegetables and water. Cook until the vegetables are tender.
  5. Season with salt and let the filling cool.
  6. Preheat the oven to 200°C (400°F).
  7. Cut out circles from the puff pastry sheets.
  8. Place a spoonful of filling onto each pastry circle.
  9. Fold the pastry in half to form a semicircle and seal the edges with a fork.
  10. Brush the puff pastry with egg wash.
  11. Bake in the preheated oven for 15-20 minutes or until golden brown.
  12. Allow the curry puffs to cool before serving.
