Kaffir Lime Custards
Kaffir lime leaves are commonly used in Thai cuisine for their aromatic and citrusy flavor.

Preheat the oven to 325°F (160°C).

In a saucepan, combine the coconut milk, sugar, and kaffir lime leaves. Bring to a simmer over medium heat.

In a separate bowl, whisk together the egg yolks, cornstarch, salt, lime zest, and lime juice.

Slowly pour the hot coconut milk mixture into the egg yolk mixture, whisking constantly.

Strain the mixture through a fine-mesh sieve back into the saucepan.

Cook over medium heat, stirring constantly, until the custard thickens and coats the back of a spoon.

Remove from heat and let it cool for 10 minutes.

Divide the custard among four ramekins or small bowls.

Place the ramekins in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.

Carefully transfer the baking dish to the preheated oven.

Bake for 25-30 minutes or until the custards are set.

Remove from the oven and let them cool to room temperature.

Once cooled, refrigerate for at least 1 hour before serving.

Serve chilled and garnish with additional kaffir lime leaves, if desired.
