  1. Preheat the oven to 350°F (175°C).
  2. Cut the kabocha squash in half, remove the seeds, and bake in the oven for 30 minutes or until soft.
  3. Scoop out the flesh and mash it with a fork.
  4. In a large bowl, combine the mashed kabocha squash, flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  5. In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract.
  6. Add the wet ingredients to the dry ingredients and mix until well combined.
  7. Fold in the chocolate chips.
  8. Pour the batter into a greased loaf pan.
  9. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Slice and serve.
