  1. Preheat the oven to 375°F (190°C). Grease and line a jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a separate large bowl, beat the eggs and granulated sugar until light and fluffy. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the egg mixture, mixing until just combined.
  5. In a small saucepan, melt the unsalted butter over low heat. Stir in 1/4 cup of the batter, then pour the butter mixture back into the remaining batter. Mix well.
  6. Pour the batter into the prepared jelly roll pan, spreading it evenly.
  7. Bake for 10-12 minutes, or until the edges are golden brown and the center is set.
  8. Remove the cake from the oven and let it cool in the pan for 5 minutes.
  9. Dust a clean kitchen towel with powdered sugar. Carefully invert the cake onto the towel.
  10. Gently peel off the parchment paper and roll up the cake, starting from the short end, using the towel to help you.
  11. Let the rolled-up cake cool completely on a wire rack.
  12. Once cooled, carefully unroll the cake and spread the whipped cream evenly over the surface.
  13. Arrange the assorted fruits on top of the whipped cream.
  14. Roll the cake back up, without the towel, and place it on a serving platter.
  15. Dust with powdered sugar and refrigerate for at least 1 hour before serving.
  16. Slice and serve chilled.
